What you need:
- 1 1/4 cup of semi-sweet chocolate chips (dairy-free is the way to go-you can find them in the health food section of your grocery store or just buy the ones at Trader Joe's)
- 4 large eggs (yolk and white separated)
What you do:
- Preheat the oven to 325 degrees
- Grease a 8x8 pan with something (I like to do it with coconut oil)
- Beat the egg whites on medium high in a mixer until soft peaks form (this is when you take away the whisk and the whites stay up and curl forward and maintain a bit of shape)
- While you are beating the eggs, melt 1 cup of chocolate chips in the microwave
- Stir in one egg yolk at a time into the melted chocolate
- Add about 1/4 of the egg whites into the yolk/chocolate mixture and gently fold in until you have used all of them
- Spread mixture in greased pan and top with the remaining 1/4 cup chocolate chips
- . Bake for 25 minutes
I also like to add a sprinkle of sea salt to my cake brownies before I bake them, but then that would be 3 ingredients....so if that feels like too much, skip it.
These are great served with berries or just by themselves. Refrigerate leftovers.
