Orange/Ginger Glazed Salmon with Berry/Nutty Salad
(serves 4)
Salmon:
Ingredients
- 1 pound salmon split into 4 fillets
- 1 cup orange juice
- 2 teaspoons balsamic vinegar
- 1 teaspoon finely shredded fresh ginger root
- salt and pepper to taste
Directions
- Preheat oven to 375 degrees
- Put orange juice in a small saucepan over medium heat. Cook and stir 10 to 15 minutes, until reduced by about 1/2 and thickened. Remove from heat, and allow to cool.
- Stir balsamic vinegar and ginger root into orange juice.
- Line a medium baking dish with foil and spray with cooking spray. Place salmon fillet on foil, skin side down. Cover with orange/ginger mixture.
- Bake salmon in the preheated oven 25 minutes or until easily flaked with a fork.
Salad
Ingredients
- 6 cups fresh spinach
- 1 cup blueberries
- 1/2 cup walnuts
- 1 tart apple, cubed
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup blueberry preserves
- 1/4 tsp onion salt
- 1/2 tsp pepper
Layer spinach, blueberries, walnuts and apples in a large salad bowl. Combine the olive oil, vinegar, preserves, onion salt and pepper into a small bowl and whisk until combined. Pour dressing over salad and enjoy immediately.
