Super Food, Super Meal

Try this superfoods meal that takes almost no time at all to prepare and all of the ingredients fight diseases like cancer and heart disease. Enjoy!

Orange/Ginger Glazed Salmon with Berry/Nutty Salad

(serves 4)


  • 1 pound salmon split into 4 fillets
  • 1 cup orange juice
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon finely shredded fresh ginger root
  • salt and pepper to taste


  1. Preheat oven to 375 degrees
  2. Put orange juice in a small saucepan over medium heat. Cook and stir 10 to 15 minutes, until reduced by about 1/2 and thickened. Remove from heat, and allow to cool.
  3. Stir balsamic vinegar and ginger root into orange juice.
  4. Line a medium baking dish with foil and spray with cooking spray. Place salmon fillet on foil, skin side down. Cover with orange/ginger mixture.
  5. Bake salmon in the preheated oven 25 minutes or until easily flaked with a fork.



  • 6 cups fresh spinach
  • 1 cup blueberries
  • 1/2 cup walnuts
  • 1 tart apple, cubed
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup blueberry preserves
  • 1/4 tsp onion salt
  • 1/2 tsp pepper

Layer spinach, blueberries, walnuts and apples in a large salad bowl. Combine the olive oil, vinegar, preserves, onion salt and pepper into a small bowl and whisk until combined. Pour dressing over salad and enjoy immediately.
