Yummy twist on stir-fry

Say "yes!" to apples in stir-fry! This recipe is adapted from a recipe that I saw on morefruitsandvegetables.org. I just added some tasty and super healthy additions.

Ingredients:
-1 lb diced chicken breast
-1 tsp sesame seed oil
-cooking spray
-12 oz frozen pea pods
-2 cups thinly sliced carrots
-1 cup sliced onion
- 1 tart apple thinly sliced
-1 can water chestnuts
-2 cups cooked brown rice (cooked in half chicken broth and half water)

What to do:
-sauté chicken in oil and cooking spray until browned and cooked through--remove from pan
-in same pan, cook onions, basil and carrots until tender
-add pea pods and water chestnuts--sauté for 2 minutes or until hot
-add back in chicken and thinly slice apple
-serve 1.5 cups stir fry over 1/2 cup rice

Enjoy! (all that for under 300 calories!)
