Eat MORE Veggies in 2023





We know that balanced eating includes eating lots of fresh veggies. But sometimes just because we know something, doesn’t make it easy to do.
 In fact, according to the CDC, only 1 in 10 Americans get the recommended veg in their mouth every day.  What's the recommended amount, you might ask? Well, friend, it's 5 (or more) servings a day.

Why eat your veggies? For many, many, many reasons, but here are a few compelling reasons for loading up your plate and snack drawer with things that grow in the ground.

  • Vegetables contain essential vitamins and minerals that our bodies need to operate. Plus, they are a great source of fiber! Studies show that those who eat a diet rich in fresh produce have a lower incidence of disease such as cancer, cardiovascular issues, diabetes and stroke.
  • Eating fresh veggies can help you control your weight. Vegetables are naturally low in calories, rich in nutrients and most are virtually fat free. So...eat them first thing at a meal to eat less calories and more of the good stuff overall.
  • Eating veggies will make you feel good. When you eat whole foods (unprocessed food), your body responds well, your skin glows and your systems work like they should.

5 servings of vegetables might seem like a hard pill to swallow or get into your schedule. But it’s actually very easy if you make sure to have a serving at every meal and snack. Here are a few simple ways to get your daily quota without blinking an eye. (Also...can you tell that I'm obsessed super versatile cauliflower rice? :) )

  • Breakfast: 
    • Throw some peppers, zucchini and broccoli in your morning omelet
    • Scramble eggs with cooked cauliflower rice (1/2 cup in the microwave for 2 minutes)-it gives them bulk and doesn't add flavor
    • Make a tasty smoothie with a bunch of baby spinach and kale, your favorite fruit and unsweetened almond milk (you won’t even be able to taste the greens…I promise)
  • Lunch: 
    • Top your sandwich with actual veggies (forget the sad piece of lettuce and tiny sliced tomatoes…they don’t count). Add cucumbers, peppers, spinach, mushrooms, etc.
    • Hit the salad bar and load up with all colors of pre-cut vegetables including dark leafy greens, tomatoes, carrots, turnips, peas, cabbage, you get the picture…lots of veggies. 
    • Make soup! And make it creamy by adding in cauliflower rice whipped in the blender with your preferred milk choice (here's an example recipe)
  • Dinner:
    • Load your spaghetti sauce (or any sauce for that matter) with tons of veggies. My favorites are broccoli, zucchini, onions, and mushrooms...and cauliflower rice.
    • Make stir fry with lean meat and lots of veggies such as cabbage, carrots, broccoli, snow peas, mushrooms and celery...over a bed of cauliflower rice mixed with brown rice.
    • Steam, sauté, roast or air-fry your favorite veggie and have it on the side…have lots on the side…so much so that it looks like it’s the main course
    • Eat a side salad before dinner to eat less
    • Make an old school vegetable soup with lots of chunky veggies-frozen count too!
  • Snacks:
    • When you go to the salad bar for a salad, get lots of pre-cut veggies to munch on when you get hungry
    • Make sure to have cut up carrots, broccoli, peppers, celery, jicama, etc for crunching and dipping in protein packed dips like hummus.
    • Celery with natural peanut butter
    • Steam a bag of veggies (frozen veggies are just like fresh…as long as they aren’t in sauce)
    • Get a pre-cut veggie tray and eat off of it (often)
What looks like a serving or half cup? Besides the obvious measuring techniques, keep these easy to remember tips close at hand:

  • 5 broccoli florets
  • 6 baby carrots
  • 1 large handful of raw greens (spinach, kale, lettuce, cabbage, etc.)
  • 1 large stalk of celery
  • 7 circle slices of zucchini or yellow squash
  • 6 bell pepper strips
  • 1/2 cup riced cauliflower

Acai Berry Protein Smoothie Bowl

 

I know I'm late to the game, but I'm OBSESSED with smoothie bowls right now. Anyone else?

If you haven't yet tried them, let me introduce you. Basically a smoothie bowl is a thick, eat-with-a-spoon smoothie topped with fruit or nuts or coconut or seeds or granola or really anything you'd like. Delicious!

You can, and I have, purchased these delicious bowls at certain juice/smoothie places, but you can also super easily make them at home for less $$ and perhaps even more yummy flavor. 

This is my go-to at home breakfast or lunch when I need something cool, refreshing and full of vitamins. There are a lot of frozen ingredients, so feel free to freeze your own...it's important to have them frozen because that is what give the smoothie a thicker eat-with-a-spoon consistency (along with the chia seeds). 

E. H. Fitness Acai Berry Protein Smoothie Bowl

What you need:

  • packet of frozen acai (I get mine at Sprouts)
  • 1 small frozen banana (or 1/2 large)
  • 1/4 cup frozen avocado chunks (I get mine at Sprouts or Costco)
  • 1 TBSP chia seeds
  • 1/4-1/2 cup or so of unsweetened almond milk
  • 1 scoop (1/2 serving) of protein powder (I really like the vegan Orgain Vanilla)
  • handful of spinach or kale or other greens if you have them laying around
    My favorite toppings: sliced strawberries, blueberries and 2 TBSP gluten-free granola

What you do: 
  1. Blend the junk out of all the ingredients (minus the toppings).
  2. Pour into a bowl
  3. I like to put my bowl in the freezer for 5 minutes or so while I get my toppings together/chopped
  4. Top your bowl
  5. Eat!
A tip when blending. Use a strong blender and scoop up the stuff that gets shot to the sides of the blender and re-blend when necessary

A Garden Fresh Soup for Hot Days



I've been blessed to have friends and family that have an over-abundance of tomatoes, cucumbers, jalapenos, bell peppers, onions and garlic in their gardens (I have an over-abundance of basil...and one plant that may or may not be a weed). I'm telling you all of this because those ingredients are exactly what you throw into a blender to make the most refreshing and yummy gazpacho ever! (If you haven't heard of or tried this delicious Italian cold soup, you are in for a treat). AND if you don't have a green thumb (like me)...just go to the store and grab these yummy ingredients. Easiest soup EVER!

E.H. Fitness Garden Gazpacho


What you need: 
  • 3-4 large, ripe tomatoes cut into chunks
  • 1 large cucumber, cut into chunks
  • 1/2 onion, cut into chunks
  • 2 cloves garlic, you guessed it, cut into chunks
  • 1 bell pepper (any color), cut into chunks
  • 1 jalapeno if you like it a bit on the spicy side

  • LOTS of FRESH basil  (if you don’t have any growing in your garden and can’t swipe some from a neighbor, pony up and get some fresh from the store)
  • 1 tablespoon olive oil
  • 1/8 cup red wine vinegar
  • Salt and Pepper to Taste
What you do: 
  1. Throw everything in a blender and turn it on. Blend until it’s soup. Crazy easy, right? Put in the fridge and serve super chilled!
Tada! You did it! Enjoy!

Double Chocolate Raspberry Muffins


My house if full of 3rd graders (we are in the middle of another 4-day-weekend...whoop). So I decided to create a chocolaty, raspberry muffin...and they are too good. They are dairy, gluten and soy free and you can't even tell. This is a great recipe because you can sub so much of it out. Don't have avocado oil? No problem, use coconut or olive oil. Don't have coconut sugar? No problem, use maple syrup. Don't have coconut flour? No problem, just use more oatmeal!

E. H. Fitness Double Chocolate Raspberry Muffins

What you need:
  • 1 cup dry old fashioned oatmeal
  • 1/2 cup coconut sugar
  • 1/4 cup coconut flour 
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup dairy free semi-sweet chocolate chips                                                                      (Trader Joe's regular chocolate chips are dairy-free!)
  • 3/4 cup unsweetened almond or coconut milk
  • 5 tablespoons avocado oil
  • 2 teaspoons vanilla extract
  • 2 room temp eggs
  • 1/4 cup honey
  • 3/4 cup raspberries (fresh or thawed from frozen)
What you do:
  1. Preheat the oven to 350 degrees
  2. Line muffin tins with liners (or grease them)
  3. Put oats and sugar into a blender or food processor for 30 seconds (to make oat flour and grind the course sugar a bit for texture sake)
  4. Combine all dry ingredients in a large bowl and mix well, add chocolate chips
  5. Combine all wet ingredients in a separate bowl (make sure to whisk eggs)
  6. Add raspberries to the wet ingredients and smash a bit with a fork
  7.  Mix wet and dry ingredients together 
  8. Put about 1/4 cup mixture into each liner
  9. Bake for 20-23 minutes.
  10. Cool before diving in!

New 4-Ingredient Protein Balls (perfect for protein snowmen)

T hese protein balls are super easy (4 ingredients!) and also super fun. I'm actually taking them to a little Christmas get together tonight...ho ho ho (or whatever snowmen say).

Anyway, I usually use unflavored protein for my protein balls but I ran out and instead played around with using vanilla protein powder (the kind I would use in a shake) and it turned out GREAT. Plus, I didn't have to add any extra sweetener...whoop!

What you need: 
  • 1 cup oatmeal made into flour (just put it in the blender and turn it on for 10 seconds or so)
  • 1 cup natural peanut butter
  • 4 scoops (or 100 grams) of vanilla protein powder...I used Orgain Vanilla Bean (it's vegan)
  • unsweetened almond milk to bind (anywhere from 2 TBSP-1/4)


What you do:


  1. Toss oatmeal flour, peanut butter and protein powder in a mixer (or use your muscles and mix it by hand...or with a spoon)
  2. Add 1 TBSP of almond milk at a time until "dough" sticks together and can be shaped...but not sticky
  3. Shape into balls or snowmen or whatever!
  4. If you like your protein balls a bit more exotic, add some chocolate chips or coconut or chia seeds or whatever you like!

The Perfect Baked Potato



For years, I kinda forgot about baked potatoes, and then I remembered them...and I'm so glad I did. This particular potato has perfectly crispy skin...that you should definitely eat...and a soft fluffy inside (you should eat that part too). You can top them however you want, but just salt, pepper and a bit of garlic powder is delicious OR leftover chili...yummy!!!

What you need:
  • Large baking potatoes
  • Course Kosher salt
  • Olive oil
What you do: 
  1. Preheat the oven to 375 degrees
  2. Scrub the potatoes clean
  3. Pat completely dry
  4. Rub potatoes with oil
  5. Rub potatoes with salt (lots of it should stick)
  6. Put the potatoes directly on the middle rack
  7. Place a pan or foil on the lower rack to catch any oil that drips
  8. Bake for 1 hour

Pumpkin Spice (and everything nice) Shake


It’s Fall! It’s Fall! I just went for a short run with a jacket on!!! It’s here! And therefore, it’s time for a new flavor of shake...and I’m sure you can guess what it is...pumpkin spice. I know...it’s everywhere, and this looks like every other shake I make (blame the handfuls of spinach) but let’s just remember that pumpkin is amazing for us. 


Pumpkin is...

🎃 packed with beta-carotene and lutein to help with healthy eyes

🎃 great at keeping our immune system strong with its loads of vitamin C and A

🎃 said to reduce blood glucose levels and therefore can help with diabetes

What you need: 


-1/4 cup pumpkin purée 

-1 tsp pumpkin pie spice (or just some cinnamon and nutmeg)

-1 cup unsweetened almond milk

-2 handfuls spinach

-1/4 small avocado 

-Ice if you like it chilly

-1 scoop vanilla protein powder (I use @drinkorgain vegan vanilla bean)

-1 scoop unflavored collagen (I use @vitalproteins ...it’s @Costco for cheap!)


What you do:


Blend it and drink it!!

Grilled romaine...it’s a thing...





Last night we grilled burgers...and with a good burger, comes all the toppings ...including a leaf of crisp romaine. Normally I would make the rest of the romaine heart into a salad (or, let’s be honest, it would wilt and get slimy in my fridge), but a sweet client of mine had just told me she grills romaine bearts.

 So I tried it. And I LOVED it!

It was so easy, simple and delicious!

Simple Grilled Romaine

What you need:
  • Heart of romaine
  • Oil of choice (I used avocado oil...I’m obsessed)
  • Salt and pepper
  • Toppings if you want (bacon, cheese, dressing)
What you do: 
  1. Slice romaine heart in half lengthwise
  2. Drizzle with oil on both sides
  3. Salt and pepper
  4. Grill for 3 minutes each side
  5. Too with any toppings you’d like...totally optional...it’s amazing plain!

Easy-Peasy Protein Balls



I love protein balls...and so do my kids...and at tea shops and vegan bakeries, they can be costly for what they are. So a few years ago, my son and I came up with what we thought was the perfect protein ball recipe for home. We haven't deviated very much, but I feel like my daughter and I have recently really nailed it. 

This ball of protein and flavor is delicious and super simple, which means, you can add to it. So take the basic delish recipe and feel free to put nuts in, chia seeds, chocolate, dried fruit, etc.


What you need:

  • Parchment paper lined cookie sheet
  • 1 cup peanut butter (we used raw salted creamy natural peanut butter but almond butter or sunflower butter would be great too)
  • 1/3 cup honey (we used raw organic honey but agave or maple syrup or brown rice syrup will do as well, although you may want to do a bit less)
  • 54 grams of unflavored pea protein powder (we used 2 1/2 of the pea protein from Trader Joes but you can use whatever you want, just make sure it's unsweetened and just protein powder)
  • 1 cup oatmeal (we used gluten free quick oats), ground in a blender to course "flour"
  • 22 chocolate chips
What you do: 

  1. If you have a few minutes, on medium-low heat, combine peanut butter and honey and stir until smooth (be careful, it can burn!). You can skip this step, it will just take a bit longer for all the ingredients to incorporate.
  2. Remove pan from burner and let cool for a minute stirring continuously.
  3. Mix in protein powder and oatmeal in (you get a bit of an arm workout since it gets pretty thick)
  4. Make into tablespoon sized balls (or use a cookie dough scoop if you're lazy...er resourceful... like me).
  5. Top with a chocolate chip (totally optional :) ) 
  6. Refrigerate for around an hour and eat 'em! (they freeze really well too)

Lemon Poppy Seed Muffins...just in time for Easter Brunch!


I just ate one of these guys and I can not tell you how amazing these are. I don't eat gluten and dairy because those foods trigger some very scary migraines. So I tend to miss out on cake, cookies, scones, muffins, cinnamon rolls and basically all other amazing baked goods. And I miss them! So when I try out a new recipe and it's like the good ol' gluten-filled version, it really makes my day.

These gluten free lemon poppy seed muffins do not disappoint ( I betcha my family wont even be able to tell they are made with coconut flour).

What you need:

  • 6 eggs (at room temp)
  • 3 lemons juiced (about 5-6 TBSP)
  • Zest of lemons if you want to make them extra tasty
  • 1/2 cup honey 
  • 1/4 cup avocado oil (or ghee if you want a buttery, lactose-free experience)
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 3/4 cup coconut flour (I buy mine in the bulk section of Sprouts)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1-2 TBSP poppy seeds

What you do:

  1. Pre-heat the oven to 325 degrees
  2. Line a muffin tin with liners or grease generously
  3. In a blender, blend all the wet ingredients and then add the wet ones and poppy seeds
  4. Pour or scoop (about 1/4 cup) into twelve muffin things
  5. Bake for 25-30 minutes (until baked through)
  6. ENJOY!

Mango....yes please!



Mango wasn't a fruit on my radar until recently. In fact, I didn't really like it. It was a bit "fuzzy" in it's texture for me. But then, all of a sudden, my sister offered me a disgusting looking piece of dried orange-ish-brown fruit...and because I was super-duper hungry, I took it. My. Mind. Was. Blown. No joke, My head snapped up  "What is THIS!" I asked (overly excitedly). "Oh," said my sister. "It's just unsweetened, unsulfured, dried mango." I was SOLD. Fresh mango, dried mango, freeze dried mango, frozen mango, any kind...I'm in.

With no added sugar, mango has become my go-to sweet treat. Check out its impressive nutrition profile.

Mango is awesome because:
  • Contains over a dozen kinds of antioxidants...yep...those guys that fight against free radical damage that can lead to cancer, diabetes and other illnesses.
  • Boosts immunity with lots of vitamins A, C, E and B
  • Helps with digestive health with lots of fiber and digestive enzymes
  • It's super duper yummy
I did have to do a bit of research on how to tell when/if a mango is ripe, so let me break it down for you in case you don't know either: just like a avocado and peaches, it should have a little softness to it. And it might smell fruity at the stem...that's it!This video is super helpful when cutting up fresh mango.

Blender Brownies (no added sugar!)



My sweet friend, Karlie, asked me yesterday about a brownie recipe for the Wellness Challenge I'm leading right now. I was sooooo interested, so I doctored it up a bit, and I'm a fan. These are paleo and Whole30 compliant (just leave out the vanilla) and are dynamite after letting them sit for a few hours or even over night.

What you need:

*2-3 very or over ripe bananas
*1/2 cup unsweetened cocoa powder
*2/3 cup salted almond butter (crunchy or creamy)
*1/2 tsp vanilla (leave out if on Whole30)

What you do: 

  1. Pre-heat the oven to 350 degrees
  2. In a blender, mash up the bananas and then add the rest of the ingredients and blend until silky smooth
  3. Pour into a silicone pan (or grease a pan with coconut oil)
  4. Back for 15 minutes
  5. Wait for a few hours...I know it's hard, but you will thank me
  6. Enjoy!


If you wanted to make these fluffier, you could totally whip some egg whites and fold those suckers in as well. I think these would be even yummier with banana "ice cream." Enjoy!

Roasted Potatoes with Onions and Peppers

On Christmas morning my mom made roasted potatoes with peppers and onions as part of brunch...and even just thinking about them right now, my mouth is watering. Ever since then, I've been making a big batch each week for, well, whenever I want them. I use them as sides for salmon or hamburgers or under eggs in the morning. I can't tell you how yummy and satisfying they are AND simple to make.

What you need: 
  • Several pounds of white potatoes (my favs are smaller red and gold OR even better, the tiny bite sized kind so you don't have to cut them up)
  • 1-2 large sweet potatoes 
  • 1-2 large yellow onions
  • 4 bell peppers (I like using orange and yellow peppers for this)
  • Avocado oil
  • Salt and pepper to taste
What you do:
  • Pre-heat your oven to 425 degrees
  • Cut up white potatoes in to medium chunks (or don't if they are the little guys)
  • Peel and cut up sweet potatoes into chunks similar to the other potatoes
  • Cut onions and peppers into chunks (remember they will shrink a bit so you can make them pretty large-time saver!)
  • Toss all potatoes and veggies in enough oil to coat them all slightly
  • Add salt and pepper
  • Spread it all out on a baking sheet
  • Cook those suckers for 20 minutes, then stir, repeat until they are baked to your preference
I like the onions and peppers to be slightly burnt, so I cook mine for a while and then just turn the oven off and let them cool in there.

Most delicious Brussels sprouts EVER

So normally, I only cook/bake the easiest, most lazy recipes, but this one is worth a little tiny bit of extra work. These are my three step perfect Brussels sprouts for any occasion...and what I'm bringing to both our Thanksgiving meals tomorrow. Not only are these delicious by themselves, but you can dress then up anyway you want. Bacon/maple, cherries/almonds, bacon/cranberries are some of my favorites.

What you need:


  • fresh Brussels sprouts (the smaller the better and because I'm lazy, I like the ones you can buy that are pre-washed and trimmed)
  • a carton of vegetable, chicken or turkey broth
  • olive or avocado oil
  • salt and pepper (and any other spices you like...i sprinkle some garlic and onion powder on when sauteing)
What you do:
  1. Pre-heat your oven to 400 degrees
  2. Slice your washed and trimmed sprouts in half.
  3. Boil them in your broth of choice for 1-2 minutes in a large skillet....you do NOT want them to cook fully
  4. Drain sprouts and in same skillet, dump the sprouts back in with your oil
  5. Saute the sprouts in oil until they start to brown and soften a bit (don't worry if some of the leaves come off...those will be the yummiest parts later!)
  6. Drain sprouts again if there is any liquid in the pan.
  7. Spread the sprouts on a lightly oiled cookie sheet in one even layer
  8. Salt and pepper them
  9. Roast those puppies for 20-30 minutes until they are brown and crispy. You'll have to toss them at least once during the roasting process.
  10. SERVE!
Note: if you are dressing them up with extras, I like to throw the "extras" onto the pan while roasting about 5-10 minutes before they are finished.

The perfect protein ball

When I asked my three-year-old what she wanted to make for a snack with her friend today, she said "protein balls, please." So we did...in 10 minutes flat...and they are rock-star protein balls! PLUS, you can make them with all sorts of stuff. You could add flax, chia seeds, chocolate, fruit, etc


What you need:

  • Parchment paper lined cookie sheet
  • 1 cup nut butter (we used raw salted creamy natural peanut butter but almond butter or sunflower butter would be great too)
  • 1/2 cup sweetener (we used raw organic honey but agave or maple syrup or brown rice syrup will do)
  • 54 grams of protein powder (we used 2 1/2 scoops IsaPro vanilla...just make sure it's unsweetened and just protein powder)
  • 1 cup oatmeal (we used gluten free quick oats)
  • 22 chocolate chips
What you do: 

  1. On medium-low heat, combine peanut butter and honey and stir until smooth (be careful, it can burn!)
  2. Remove pan from burner and let cool for a minute stirring continuously.
  3. Mix in protein powder and oatmeal in (you get a bit of an arm workout since it gets pretty thick)
  4. Make into tablespoon sized balls (or use a cookie dough scoop if you're lazy...er resourceful... like me).
  5. Top with a chocolate chip (totally optional :) ) 
  6. Refrigerate for around an hour and eat 'em!

Nutrition stats:
(per ball...recipe makes 22)
115 calories, 6 grams fat, 11 grams carbs, 6 grams sugar, 1.5 grams fiber, 5.5 grams protein

EDIT: I made another batch using half the sweetener and added 2 tbsp unsweetened almond milk and they were perfection, plus you shave off 15 calories and 3 grams sugar :)

Make in a blender perfect autumn soup

Always the lazy cook, I've come up with the easiest and cleanest and tastiest Butternut Squash Soup that is perfect for the fall, winter or even cold in the summer. Plus, butternut squash is super high in vitamin A (you’ll get over 100% of your daily recommended intake). Vitamin A is required for the development of eyes, skin, and immune system. So it’s important. AND it has the super spice turmeric which is believed to aid in digestion, prevent Alzheimer’s disease, heal wounds, ward off cancer, control diabetes, relieve arthritis and a bunch of other awesome things. Makes you kind of want to just eat a whole canister of it, right? Don’t, that would be gross. But DO eat this soup!
 To make this the easiest thing ever, I recommend cooking your butternut squash in a crockpot. I often will just do this move and then keep the perfectly done squash in my fridge if I'm not read y to make the soup-yay! Check out this recipe in all of it's glory.

Butternut Squash Soup:
What you need: 
  • 1 medium butternut squash
  • 1 medium onion, chopped
  • 1 TBSP minced garlic
  • 1/2 TBSP minced ginger
  • 1 heaping TSP tumeric
  • 1 TSP curry powder
  • 3 cups vegetable broth (or chicken bone broth or stock)
  • 1 cup light unsweetened coconut milk
  • salt and pepper to taste
What to do:
  1. Cook the butternut squash (whole) in a crockpot for 3-4 hours on low, let cool a bit and then scoop out the insides (toss the seeds). You can totally do this part a couple days in advance and keep the perfectly cooked squash in the fridge.
  2. Saute the onions in a bit of the chicken broth until they are soft (about 10 minutes), add all the spices and rest of the broth. Set aside and let cool a bit.
  3. Dump everything into a blender...you might have to do this in batches. If the broth and onion deal is still hot, make sure to only fill the blender halfway as you could end up covered in the delicious soup
  4. Blend until smooth, add the coconut milk, blend again and you are done!

Chocolate Banana Zucchini Bread-clean and soooo yummy



Today, my husband and kids suggested going to an amazing vegan bakery for a little snack...my favorite because they also bake the most delicious gluten free treats too! Much to my disappointment, they had sold all of the gluten free offerings that day...so sad. So when I got home, I decided to make my own treat with some bananas that were totally overripe and a huge zucchini from my in-laws garden. This is soooo easy, soooo yummy and full of fruit and veggies!

What you need:
2 cups oats, pulsed in blender until "flour"

  • 2 very ripe bananas smashed
  • 2.5 cups of shredded zucchini (I spiralize and run a knife through mine)
  • 100 calories worth of plain, vegan protein powder. I like the pea protein from Trader Joe's
  • 1/3 cup pure maple syrup
  • 1/4 cup unsweetened almond milk
  • 2 TBSP oil of choice (loving my avocado oil)
  • 1 1/2 TBSP apple cider vinager
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp kosher salt
  • 3/4 tsp baking powder
  • Dash of cinnamon
  • 1/2 cup chocolate chips 
What you do:
  1. Pre-heat oven to 350 degrees
  2. Grease a 8x8 pan
  3. Combine all ingredients except the chocolate chips in a blender or food processor and blend until smooth and then fold in the chocolate
  4. Pour into the pan and bake on middle rack for 40-45 minutes 
EAT it!

Nutrition for one giant piece...1/9 of the pan
